GREEN BURRITO
- Beans - Refried / Red / Your Choice
- Green & Yellow zuchinni
- Green Bell Peppers
- Sliced into strips then smaller segments
- Jalapeno Pepper (If preffered)
- chopped into slices and then smaller pieces
- Arugula leaves
- Fresh
- Cilantro
- Onions
- Yellow or Amethyst, cut into small pieces
- Vegetable or olive oil
- Soft Tortillas or wraps
- Guacamole (See below)
- Your favorite hot sauce
- Your favorite cheese, shredded

Heat up beans either in microwave or over stove top. Heat small amount of oil in a large pan, then sprinkle with garlic poweder / salt / your favorite seasoning (we recommend Cavender's Greek Seasoning). Over medium low heat quickly cook your squash slices and set aside or in a microwave, something to retain heat.
In the same pan, put your tortilla shell and heat both sides until oii has seeped in and shell is not oily or wet, but before it gets hard or cripsy.
Inside shell, layer beans, then some squash pieces, then cheese, then green peppers and jalapenos, then arugula, then cilantro and top with guacamole and your favorite hot sauce. Roll up and enjoy!
GUACAMOLE
- Avacados, softened in paper bag, skinned and pitted (save pits to preserve guac color)
- Tomatoes, diced
- Salt
- Lime
- Cayenne (if preffered)
- garlic powder / onion salt to taste
Dice tomatoes, shake salt and garlic pepper / onion salt and let sit.
Mash up avacados well. Add lime juice, mix, then stir in cayenne pepper.
Mix tomatoes, etc into avacado mixture and add more seasonings to taste. A bit of hot sauce works well too. Chill before using, and store with pits in guac to preserve color.
